Preparation:
Mix muffin mix and butter until crumbly. Press half of crumb mixture (1 cup) into greased glass 8 or 9 inch square pan. Microwave on power level 10 (high) for 3 minutes, rotate (or use turntable) at 45 second intervals. In a 2 quart glass bowl, microwave the dates, lemon juice and water for 3 minutes, until thickened. Spread date mixture on baked crust and sprinkle with remaining crumbs. Microwave on power level 10 (high) for 3 or 4 minutes. Cool slightly and cut in squares. Cool and serve. Makes 12 date bars. |
