Preparation:
1. Preheat oven to 425. Spray 1-qt casserole with nonstick cooking stray.
2. In medium nonstick skillet, melt margarine over medium heat; add onion and mushrooms; cook over medium heat utnil onion is translucent, about 2 minutes.
3. Stir in potatoes, rosemary, and pepper; transfer to prepared casserole. In 1-cup measure, stir together chicken broth mix and 1/3 cup water; pour over potatoes; top evenly with cheese.
4. Bake uncovered, until potatoes are fork-tender, abut 30 to 35 minutes. |
