1 can sweet potatoes -- (16 oz.)
1 can sliced pineapple -- drained (8 1/4 oz.)
1/4 cup firmly packed brown sugar
1/4 teaspoon salt
1/4 cup coarsely chopped salted peanuts
2 tablespoons butter
Preparation:
Heat oven to 400 F. Arrange sweet potatoes in a deep 1-quart casserole.
Cut pineapple slices into halves and arrange between sweet potatoes. Sprinkle
with brown sugar, salt, and peanuts; dot with butter. Bake 25 minutes.
