AVOCADO TOPPED POTATOES

Ingredients:

   4      large         baking potatoes
                        Vegetable oil
   2      packages      cream cheese -- softened (3 oz.)
   1                    ripe avocado -- peeled and mashed
   2      tablespoons   milk
   1      tablespoon    lemon juice
   1      tablespoon    grated onion
     1/4  teaspoon      salt
   4      slices        bacon -- cooked and crumbled
   2      small         tomatoes -- cut into wedges
 

Preparation:

Wash potatoes, and rub with oil. Bake at 400 F for 1 hour or until soft when pierced with a fork. Beat cream cheese with electric mixer until smooth. Add avocado and milk, beating until smooth. Add avocado and milk, beating until smooth. Stir in lemon juice, onion, and salt. Split tops of potatoes lengthwise, and fluff pulp with a fork. Spoon topping over potatoes. Sprinkle with bacon, and top with tomato.
