Orange Yam Bake

Ingredients:

  1 1/2         pounds  yams -- to 2lb,cooked and
                        -- peeled or
  1 1/2         pounds  canned yams -- drained
     1/4           cup  butter
  1                     egg
  3        tablespoons  undiluted orange juice concentrate
  2        tablespoons  brown sugar
     1/2      teaspoon  cinnamon
     1/4      teaspoon  nutmeg
     1/4      teaspoon  vanilla
  1               dash  salt
                        *topping*
  2        tablespoons  brown sugar
  1         tablespoon  flour
  1         tablespoon  butter or margarine
     1/4           cup  chopped pecans
 

Preparation:

Preheat oven to 375 degrees. In medium bowl, whipped potatoes with electric mixer. Melt butter in small saucepan. Blend into potatoes. Add remaining ingredients, except topping, mix well. Pour potato mixture into 1 quart casserole. In small bowl, mix together topping ingredients until well blended and crumbly. Sprinkle topping over potatoes. Bake 40 to 50 minutes, or until heated through and set. (Center will remain somewhat creamy)
