Preparation:
1. Bring salted water to a boil and cook potatoes 7 minutes until just tender. Do not overcook. Drain and rinse in cold water; drain again.
2. Combine seasonings and gently toss with potatoes trying not to break apart the cubes.
3. Heat 1 inch of oil in a large skillet to 350 degrees. In several batches, fry seasoned potato cubes about 12-15 minutes, turning ocassionally to brown all sides.
4. Drain in paper towels and serve immediately. Keep fried potatoes warm in the oven while cooking remaining batches. |
