Preparation:
1. Prepare mashed potatoes according to directions. Meanwhile in a large skillet cook beef and onions until the meat in browned; darin.
2. Add tomatoes, corn, olives, taco seasoning, chili powder, salt and garlic powder. Bring to a boil; cook and stir for 1-2 minutes. Transfer to a greased 2 1/2 quart baking dish.
3. Top with 3/4 cup cheese. Spread mashed potatoes over the top; sprinkle with remaining cheese.
4. Bake uncovred at 350F for 12-15 minutes or until cheese is melted and heated through.
Notes: 4 1/2 cups read mashed potatoes can be substituted for the instant. |
