Preparation:
Scrub and dry potatoes. Pierce with a fork several times. Microwave on paper towels on High (100%) for 8 to 12 minutes, until tender, turning potatoes over after 5 minutes.
Let potatoes stand until cool enough to handle. Cut in half and scoop potato into a bowl.
Mash with a fork. Mix in orange juice, brown sugar and salt and pepper.
