Quick Pork And Bean Stew

Ingredients:

  1               Tbsp  olive oil
  2                     onions -- quartered
  2 1/4             Lb  lean leg of pork -- cubed
  1                 Lb  can chopped tomatoes
  1                 Lb  can red kidney beans -- rinsed and drained
     1/4            Pint    vegetable stock
                        salt and freshly ground black pepper
 

Preparation:

Heat the olive oil in a pan, add the onions and cook for about 8 mins until just beginning to brown. Add the pork to the pan and cook over a high heat for about 15 mins until the meat is browned on all sides. Stir in the tomatoes, beans and stock. Bring to the boil and simmer for 20 mins. Season and serve with jacket potatoes and stir-fried shredded vegetables.
