Preparation:
Presoak beans overnight or at least 4 hours. Drain. Simmer beans in chicken broth with onion, garlic and seasonings. Simmer 1 hour. Add green chilies and chicken; simmer another hour until beans are tender. To serve, put out small bowls of tortilla chips, sliced jalapeno peppers, Monterrey Jack cheese, ripe olives, salsa and/or sour cream. |
