White Chili

Ingredients:

   1      pound         great northern beans
   2      cloves        garlic
   1      large         onion -- chopped
     1/8  teaspoon      white pepper
   1      teaspoon      cumin
     1/2  teaspoon      oregano
     1/2  teaspoon      marjoram
     3/4  cup           cooked chicken or turkey -- diced
   4      ounces        canned green chilies
     1/8  teaspoon      crushed red pepper
   1      tablespoon    fresh cilantro
   8      cups          chicken broth
 

Preparation:

Presoak beans overnight or at least 4 hours. Drain. Simmer beans in chicken broth with onion, garlic and seasonings. Simmer 1 hour. Add green chilies and chicken; simmer another hour until beans are tender. To serve, put out small bowls of tortilla chips, sliced jalapeno peppers, Monterrey Jack cheese, ripe olives, salsa and/or sour cream.
