Preparation:
Thread fruit, mahimahi pieces and lime slices alternately on 10-inch skewers. Melt butter with brown sugar in a saucepan.
Brush kabobs with sugar-butter mixture and arrange kabobs on prepared grill. cook for 3 minutes, turn, and rotate kabobs every 3 minutes until mahimahi begins to flake when tested with a fork.
Arrange on individual plates and sprinkle iwth coconut. Allow guest to remove the fisha nd fruit from skewers. |
