Preparation:
1. Combine orange peel and juice, oil, onion, rosemary, thyme and salt in shallow dish.
2. Add fish, marinate 1 hour, stirring occasionally. Or marinate in tightly sealed plastic bag, turning occasionally.
3 Arrange orange wedges, fish and mushrooms alternately on 4 skewers. Place on broiler pan; broil 4 inches from heat 12 to 14 minutes, turning and brushing occasionally with remaining marinade.
4. Serve alone or with hot cooked brown rice. |
