Ingredients:

  3 1/2         ounces  peanut sauce mix
  1                can  coconut milk
  8             ounces  linguine
  2          teaspoons  vegetable oil
     1/2         pound  shrimp
  2          teaspoons  seasoning sauce
  4                     scallion
  4             ounces  bean sprouts
     1/4           cup  unsalted peanuts
     1/3           cup  fresh cilantro
  2                     lime wedge
 

Preparation:

1. combine peanut sauce mix and coconut milk in saucepan. 2. bring to a boil. reduce heat and simmer for 5 minutes stirring occasionally. set aside. 3. cook pasta until done to desired doneness. 4. drain and set aside. 5. using pasta pot, heat oil on medium high heat. 6. when hot, add shrimp and saute 3-4 minutes. 7. add seasoning sauce, peanut sauce, pasta, scallions and bean sprouts. 8. simmer until hot. 9. serve garnished with peantus, cilantro and lime wedges.
