Spicy Thai Shrimp Soup

Ingredients:

  2          teaspoons  peanut oil
  2          teaspoons  fresh ginger root
     1/2      teaspoon  crushed red chiles
  5               cups  chicken stock
  1           teaspoon  lime zest
     1/3           cup  long grain rice
     3/4         pound  tiger prawn
  6              large  mushroom
  1                cup  coconut milk
     1/2           cup  onion
  2          teaspoons  fresh lime juice
  1                cup  scallions
 

Preparation:

heat oil in a saucepot, over a medium flame add ginger and chiles heat and stir for 30 seconds add stock and lime zest bring to a boil, add rice cover, reduce heat, and simmer for 20 minutes add shrimp, mushrooms, coconut milk, and onions simmer for 4-5 minutes, just until shrimp are cooked remove from heat and stir in lime juice spoon into small bowls garnish with scallions serve hot
