Ingredients:

   2      Cups          All-Purpose Flour
   2      Teaspoons     Baking Powder
   1 1/2  Teaspoons     Baking Soda
   1      Teaspoon      Salt
   2      Teaspoons     Cinnamon
   2      Cups          Sugar
   4                    Eggs
   1      Cup           Oil
   2      Cups          Carrots -- grated
   1      8 Oz. Can     Crushed Pineapple
     1/2  Cup           Walnuts
   8      Ounces        Cream Cheese -- softened
     1/4  Cup           Butter
     3/4  Cup           Powdered Sugar
 

Preparation:

Cake: Mix flour, baking powder, baking soda, salt, cinnamon, sugar. Add eggs, oil, carrot, pineapple/with juice from can, nuts. Pour into well greased oblong baking pan. Bake 40-45 min at 350 F. Frosting: Mix softened cream cheese, softened butter and powdered sugar until smooth. Add a little milk if desired. Spread frosting on top of cooled cake. I got this wonderful recipe from a co-worker of mine. You can cut the fat content by substituting equal amounts of applesauce for all or part of the oil.
