Cheese And Bacon Griddle Cakes

Ingredients:

     3/4           cup  each: cornmeal and all-purpose flour
  1           teaspoon  baking powder
     1/4      teaspoon  each: baking soda and salt
  1 1/2           cups  buttermilk
  3              large  eggs -- separated
     1/3           cup  vegetable oil
     1/2           cup  shredded cheddar cheese
     1/2           cup  chopped green onions
     1/2           cup  crumbled cooked bacon
     1/2      teaspoon  each: salt and garlic powder
     1/8      teaspoon  pepper
 

Preparation:

Toppings: sour cream, cheese sauce, guacamole or salsa, etc. 1.In a large bowl, mix the first five ingredients, ending with salt. 2.In another bowl, whisk together buttermilk, egg yolks and 1-1/2 tablespoons oil. Add buttermilk mixture to flour mixture; stir until well blended. Stir in cheese and next five ingredients ending with peppers. 3.In a medium bowl, beat egg whites to form stiff peaks. Fold whites into batter in two additions. 4.In large skillet, heat one tablespoon oil. Working in batches, pour 1/4 cup into skillet. Cook, turning once, until cakes are puffy and golden brown. Add more oil for each batch to avoid sticking. Serve hot and top with your favorite topping.
