Preparation:
Preheat oven to 350 degrees. Grease or spray a 9-inch cake pan. Spread nuts on a baking sheet and bake for 5 to 8 minutes or until golden. Set aside. Meanwhile, in a mixing bowl with electric mixer, beat eggs until frothy. Add sugar and mix until light and fluffy, about 2 minutes. Add olive oil and mix well. Batter will be thick. Add flour, baking powder, cinnamon and salt and mix until incorporated. Mix in nuts. Spoon into prepared pan. Bake for 40 minutes, or until a toothpick inserted in center comes out clean. Cool 10 minutes, then turn out onto rack. Cool completely. Serve in wedges topped with Cinnamon Whipped Cream.
