Double Lemon Cake (Low Fat)

Ingredients:

  1       18 1/4 ounce  lemon cake mix
  1          3 oz. pkg  lemon pudding mix
  8              whole  egg whites -- slightly beaten
  1                cup  water
  1         tablespoon  olive oil
                        ***GLAZE***
     1/2           cup  powdered sugar -- sifted
     1/4      teaspoon  pure vanilla extract
     1/2    tablespoon  skim milk
 

Preparation:

Preheat oven to 350 degrees. Prepare a 12-cup fluted pan with cooking spray and flour; set aside. In a mixing bowl, combine cake mix, pudding mix, egg whites, water, and oil. Mix until well blended. Spread into prepared pan. Bake for 45 minutes. Meanwhile, to prepare glaze, combine powdered sugar, vanilla extract, and milk in a small mixing bowl. Mix until smooth. Spread over cooled cake.
