Gingerbread And Lemon Sauce

Ingredients:

     1/2           cup  sugar
  1           teaspoon  cinnamon
     1/2           cup  butter
  1           teaspoon  ginger
  1                     egg
     1/2      teaspoon  cloves
  1                cup  syrup
     1/2      teaspoon  salt
  2 1/2           cups  flour
     1/2      teaspoon  vanilla
  1 1/2      teaspoons  soda
                        lemon sauce
     3/4           cup  sugar
  3        tablespoons  lemon juice
  3        tablespoons  cornstarch
                        grated rind of 1 lemon
  1 1/2           cups  orange juice
  12                    marshmallows -- cut fine
  3        tablespoons  butter
 

Preparation:

Cream shortening and sugar. Add beaten egg, syrup and then dry ingredients (which have been sifted together). Add hot water last. This makes a soft batter but a fine cake. Bake in greased and floured 9 x 13 inch pan at 350 degrees for 25-30 minutes . Serve with cold Lemon Sauce. Lemon Sauce Cook sugar, cornstarch and fruit juice in double boiler until transparent. Remove; add butter, lemon juice, rind and marshmallows. Beat with egg beater until smooth. Refrigerated in a covered container.
