Mom's Blueberry Cake

Ingredients:

  2               cups  flour
  1 1/2           cups  sugar
     2/3           cup  butter
  2          teaspoons  baking powder
  1           teaspoon  salt
  2                     egg yolks -- unbeaten
  1                cup  milk
  2                     egg whites
 

Preparation:

Sift together the first 2 ingred. Cut in 2/3 cup butter until mixture forms pea-sized pieces. Reserve 3/4 cup of this mix for topping. To remaining mix, add next 4 ingred. Beat mixture at low speed for 3 minutes. In another bowl, beat 2 egg whites until stiff, but not dry Fold beaten whites into batter. Line a 9x13 pan with greased parchment. Pour in batter Arrange 1 cup blueberries over batter Distribute reserved topping over blueberries Bake at 350F for 40-50 minutes, until a tester comes out dry.
