Preparation:
Place flour, baking powder, salt, sugar, and lemon peel in bowl. Make a well in the center and add butter and milk. Attach bowl and flat beater. Turn to stir speed and mix 30 seconds to combine. Stop and scrape bowl. Turn to speed 4 and beat 1 minute.
Add lemon juice and eggs. Turn to speed 2 and beat 30 seconds. Stop and scrape bowl. Turn to speed 6 and beat 1 minute, until fluffy.
Pour batter into a greased and floured 9x5x3-inch loaf pan. Bake at 325 F for 1 hour and 10 minutes. Cool in pan 10 minutes, then remove and cool on wire rack. |
