Pineapple Pound Cake

Ingredients:

     1/2           cup  butter or shortening
  3              large  eggs
     1/2           cup  unsweetened frozen pineapple
                        juice concentrate -- thawed
     1/2           cup  water
  2 1/2           cups  white flour
  1           teaspoon  baking soda
  1           teaspoon  baking powder
 

Preparation:

In a large mixing bowl beat together butter (or shortening), eggs, pineapple juice concentrate, and water until thoroughly blended. Add flour, baking soda, and baking powder; beat just until blended. Spoon mixture evening into a 9" x 5" oiled and floured loaf pan. Bake in a preheated oven at 350 degrees for 45 minutes or until knife inserted comes out clean. Cool on a wire rack.
