Preparation:
Beat egg white in a medium bowl until very foamy. Gradually sprinkle in sugar, beating until stiff peaks form. In a small bowl combine egg yolk, sour cream, sugar, lemon peel and salt. Fold sour cream mixture into beaten egg whit. Spoon mixuter evenly into two individual souffle dishes taht have been buttered and lightly sprinkled with sugar. Bake in a preheated gas oven at 350 degrees F. for 20 to 25 minutes or until souffles juggle only slightly when dishes are gently shaken. Serve at once. Pass hot Cherry Sauce (see recipe) to spoon over each. |
