Beef and Broccoli

Ingredients:

  1              pound  boneless beef sirloin or top round steak -- 3/4 inch
                        thick
  1         tablespoon  vegetable oil
  1                can  campbell's tomato soup -- 10 3/4 ounces
  3        tablespoons  soy sauce
  1         tablespoon  vinegar
  1           teaspoon  garlic powder
     1/4      teaspoon  red pepper flakes -- optional
  3               cups  broccoli flowerets -- fresh or thawed
  4               cups  hot cooked rice
 

Preparation:

1. Slice beef into very thin strips. 2. In skillet over medium-high heat, heat oil. Add beef and stir-fry until browned and juices evaporate. 3. Add soup, soy, vinegar, garlic and pepper flakes. Heat to a boil. Add broccoli and cook over medium heat until broccoli is tender-crisp, stirring often. Serve over rice.
