Beef And Bean Burritos

Ingredients:

     3/4         pound  extra-lean ground beef
  1         tablespoon  chili powder
     3/4      teaspoon  ground cumin
     1/2      teaspoon  dried oregano
     1/4      teaspoon  salt
  10 1/2        ounces  red kidney beans -- rinsed and drained
  10            ounces  frozen corn
  8             ounces  mild salsa
  8                     low-fat flour tortillas -- warmed
     3/4           cup  shredded reduced-fat cheddar cheese
     1/2          head  romaine lettuce -- shredded
  2                     tomatoes -- diced
 

Preparation:

Crumble the beef into a large nonstick skillet. Add the chili powder, cumin, oregano and salt. Cook over high heat, stirring occasionally, until browned, about 5 minutes. Stir in the kidney beans, corn and salsa. Bring to a simmer over medium heat. Cook 2 minutes or until heated through. Spoon the beef mixture onto the tortillas; top with cheese, lettuce and tomato. Fold one edge of each tortilla over the filling to keep the filling from spilling out as you eat. Roll up the burritos.
