Preparation:
In a large non-reactive skillet, warm the olive oil over medium heat. Add the onions, sweet peppers, green peppers, garlic, basil, oregano, thyme, and Italian seasoning; cover and cook for 10 minutes, stirring once or twice. Remove from heat and set aside to cool.
Preheat oven to 350. Meanwhile in large bowl, combine the Italian sausage, ground beef, salt, pepper; spaghetti sauce, eggs, bread crumbs, Parmesan cheese, and tomatoes and mix thoroughly. Combine onion- seasoning mixture and mix. Place in meat loaf pan and top with Mozzarella cheese.
Bake the meat loaf for about 1 1/2 hours at 350, or until an instant-reading thermometer inserted into the center of the loaf registers 1600. Let the meat loaf rest on a rack for 10 minutes before slicing.
Note: May wish to drain fat by removing meat loaf from baking dish. |
