Preparation:
combine beef and water to cover in a stockpot, over a moderate flame bring to a boil, reduce heat, and simmer for 2-3 hours, until fork tender
remove meat from liquid with a slotted spoon, drain well place into a baking pan spread with mustard, sprinkle with brown sugar bake @ 350 degrees for 20 minutes, until glossy cut across the grain serve hot or cold, accompanied by horseradish, horseradish sauce, or hot mustard |
