Grilled Spiced Skirt Steak

Ingredients:

  4              whole  garlic cloves
  2          teaspoons  ground cumin
  1                can  chopped mild green chilies -- (4 ounces)
     1/4           cup  fresh cilantro leaves
  1         tablespoon  black pepper
     1/4           cup  fresh lime juice
     1/4           cup  pure olive oil
  1           teaspoon  salt
  3             pounds  skirt steak
 

Preparation:

Prepare barbecue (medium-high heat) or preheat broiler. Combine everything but steak in processor and process to fine paste. Spread mixture on both sides of steak. Grill or broil steak to desired doneness, about 4 minutes per side for medium rare. Transfer to cutting board and slice diagonally across grain into thin strips. I like to serve this spicy dish with warm flour tortillas, chopped avocado and chopped tomato so people can make their own burritos at the table. But the steak is also delicious just served with roasted potatoes and fresh corn on the cob.
