Preparation:
sprinkle roast on all sides with garlic powder, kosher salt, and pepper-massage into meat place roast, fat side up, onto a rack in a roasting pan insert meat thermometer in center of meat (not fat or bone) roast, uncovered, @ 325 degrees for 3-4 hours, to an internal temperature of 140 degrees for rare or 150 degrees for medium rare remove from oven and allow to stand for 30 minutes remove fat and brown in 400-450 degree oven for 10 minutes slice thinly place slices onto a heated serving platter garnish with spiced apple rings and parsley serve hot |
