Quick Chicken Casserole for Microwave

Ingredients:

1/2       C.            Diced Onion
1/4       C.            Diced Celery
1/4       C.            Diced Green Pepper (if desired)
2         TBSP.         Butter or Margarine
1         Bag           Succes Rice (uncooked)
10        ounce Cans    Swansons Chunk White Chicken (Do Not Drain)
10 3/4    ounce Can     Cream of Chicken Soup (Low Sodium)
1/3       C.            Milk
1/2       C.            Shredded Cheddar Cheese (Divided)
 

Preparation:

l. Place onion, celery , green pepper and butter in 2 quart Microwave safe casserole. Heat on Full Power 1 to 2 minutes for 1000 Watts or 1 1/2 to 3 minutes for 650 to 750 Watt or until Onion, Celery and Green Pepper are tender. 2. Mix in Rice, Chicken sSoup, Milk and 1/2 of the Cheese. Sprinkle remainder of cheese on top. Cook in Microwave on Full Power for 10 minutes at 1000 Watts or 15 minutes at 650 to 750 Watts or until heated through and Rice is done. If desired add 1 4 ounce can sliced Mushrooms. This seemed salty enough but if desired, salt to taste.
