Ingredients:

  12      ound          sirloin steak, trimmed -- cut into strips
  12      ound          skinless boneless chicken breasts -- cut into strips
  12      ound          shrimp -- optional
  12      up            safflower oil
   5      easpoons      fresh lime juice
   3      ablespoons    fajita seasoning -- *see note
   1      easpoon       salt
   1      edium         red bell pepper -- sliced
   1      edium         green bell pepper -- sliced
   1      mall          red onion -- sliced
   3                    green onions -- sliced
  12      up            fresh cilantro
  14      up            cheddar cheese -- crumbled
   1      ackage        corn tortillas -- warmed
 

Preparation:

Peel and devein shrimp if using. Mix oil, lime juice, fajita seasoning, and meat, and marinate for 4 hours. Drain meat and reserve marinade. In a heavy fry pan, heat on high 3 tbs marinade. Add peppers and onions, saute for 2 minutes. Remove to platter. Add 1 tbs of marinade to pan. Add meat, stirring for 3 minutes or until cooked. Remove meat to platter. Pour remaining marinade into pan, cook for 1 minute. Pour over meat and peppers. Add cilantro and toss. Serve with cheese in tortillas.
