Beef Roulades

Ingredients:

   1 1/2  pounds        beef round steak -- R-T-C, 1/2 inch
                        -- thick
   4      slices        bacon
     3/4  cup           diced celery
     3/4  cup           deiced onion
     1/2  cup           diced green bell pepper
   1      10 oz can     beef gravy
 

Preparation:

Cut steak into four serving pieces. Place bacon slice on each piece of meat. Mix celery, onion and green pepper; place about 1/2 cup mixture on each piece of meat. Roll up meat; secure ends with wooden picks. Wipe beef rolls with paper towels. Place in Crock-Pot. Pour gravy evenly over teaks to thoroughly moisten. cover Crock-Pot and cook on Low for 8 to 10 hours or on High for 4 to 5 hours. Skim off fat before serving.
