Shrimp In Lobster Sauce

Ingredients:

   1      pound         small shrimp -- shelled & deveined
   2      tablespoons   peanut oil
   3      cloves        garlic -- finely chopped
   4                    green onions -- thinly sliced
     1/4  pound         ground pork
   1      tablespoon    soy sauce
   1      tablespoon    black bean paste
   1      tablespoon    sherry
     1/2  teaspoon      granulated sugar
     1/2  teaspoon      salt
     1/4  teaspoon      freshly ground pepper
     1/2  cup           water
   2      teaspoons     cornstarch
   2                    eggs -- well beaten
 

Preparation:

1. In a wok, heat oil. Add garlic and green onions. Stir-fry 1 minute. 2. Add pork and stir fry 3 to 4 minutes, until no longer pink. 3. Stir in shrimp and stir fry 2-3 minutes until pink. 4. Combine soy sauce, black bean paste, sherry, sugar, salt and pepper. Stir into wok. 5. Combine water and cornstarch, mix until smooth; stir into wok and cook about 8 minutes or until thickened. 6. Stir in eggs. Remove from heat immediately and serve.
