Ingredients:

          small         loaf:
     1/2  cup           water -- +1 tbsp
   2      teaspoons     canola oil
   2      teaspoons     unsulphured molasses
   1      large         egg
   2      cups          all-purpose flour -- unbleached
     1/4  cup           buckwheat flour
     3/4  teaspoon      salt
   2      teaspoons     vital wheat gluten
   1 1/2  teaspoons     active dry yeast
          large         loaf:
   1      cup           water
   1      tablespoon    canola oil
   1      tablespoon    unsulphured molasses
   1      large         egg
   3      cups          all-purpose flour -- unbleached
     1/2  cup           buckwheat flour
   1 1/2  teaspoons     salt
   1      tablespoon    vital wheat gluten
   2      teaspoons     active dry yeast
 

Preparation:

Pour all wet ingredients into bread machine baking pan. Measure all other ingredients except yeast into baking pan. Sprinkle yeast over dry ingredients, being careful not to get yeast wet. Use regular cycle or rapid bake cycle on your machine for this loaf.
