Ingredients:

   1 1/2  cups          whole wheat flour
   1 1/2  cups          unbleached white flour
   1      teaspoon      salt
   2      teaspoons     cinnamon
   2      teaspoons     baking soda
   2      teaspoons     baking powder
                        ***
     1/2  cup           sugar
                        ***
   2      tablespoons   orange peel -- finely grated
     1/2  cup           salad oil
     1/4  cup           brown sugar -- or molasses
   2                    eggs
   2      cups          buttermilk
   1      teaspoon      vanilla
                        ***
   1 1/2  cups          shredded carrots
     3/4  cup           raisins
 

Preparation:

Combine the flours, salt, cinnamon, soda, baking powder. Mix well. Add sugar to this mixture. In a separate bowl, combine orange peel, oil, brown sugar, eggs, buttermilk and vanilla. Beat well. Add this last mixture to the first and stir only enough to moisten. Add carrots and raisins. Bake at 375 degrees for 50 to 60 minutes. Makes two medium size loaves.
