Olive Salmon Quiche

Ingredients:

   1      cup           heavy cream
   2                    eggs
   7 3/4  ounces        canned salmon -- drained and flaked
   2      tablespoons   onion -- minced
   2      tablespoons   pimento-stuffed olives -- minced
   1      tablespoon    fresh lemon juice
     1/2  teaspoon      salt
     1/8  teaspoon      white pepper
   1                    prepared 9-inch pie shell
 

Preparation:

1. Beat together cream and eggs; add salmon, onion, olives, lemon juice, salt and pepper. 2. Pour salmon-cream mixture into pie shell. 3. Bake in preheated 375 F. oven 30 to 35 minutes, or until knife inserted in center comes out clean. 4. Let stand a few minutes before cutting.
