Preparation:
Place pastry in a 9 inch glass pie dish. Prick bottom and sides of pastry with fork Microwave at high (100%) 4 to 5 minutes. Set aside. Place zucchini and onion in a small bowl. Cover. Microwave at high (100%) until onion is opaque, 2 to 3 minutes. Drain. Combine eggs, half and half, tarragon parsley flakes, salt and pepper. Place vegetables evenly in pie shell. Sprinkle with cheese and pour in egg mixture. Place quiche on inverted saucer in microwave oven. Microwave at medium high (70%) until center is set, 18 to 20 minutes. Let stand 5 minutes. Makes 6 servings. |
