Pineapple Carrot Bread

Ingredients:

   3                    eggs
     1/2  cup           vegetable oil
     1/2  cup           butter -- melted
   1 1/2  cups          sugar
   2      teaspoons     vanilla
   2      cups          shredded carrots
   8      ounce         undrained crushed pineapple
   3      cups          flour
   2      teaspoons     baking soda
   1 1/2  teaspoons     cinnamon
   1      teaspoon      salt
     3/4  teaspoon      nutmeg
     1/2  teaspoon      baking powder
   1      cup           chopped nuts
     1/2  cup           raisins
 

Preparation:

Beat together eggs, oil, butter, sugar, and vanilla until foamy. Stir in carrots and pineapple. Add remaining ingredients; stir until just mixed. Pour into two buttered and floured loaf pans (8 1/2 x 4 1/2 inches). Bake at 325 degrees, 1 hour. 2 loaves (16 slices per loaf).
