PINEAPPLE SWEET BREAD

Ingredients:

                        SPONGE
   1      tablespoon    yeast
     1/4  cup           unbleached white flour
   1      teaspoon      sugar
     1/4  cup           warm water
                        COMPLETEING THE DOUGH
   3      cups          unbleached white flour
   1      teaspoon      salt
     1/4  cup           sugar
   1      cup           dried pineapple  (4 ounces) -- chopped
     1/2  stick         unsalted butter   (2 ounces) -- softened
   2      extra large   eggs
     1/4  cup           sour cream
 

Preparation:

SPONGE Have all the ingredients at room temperature, place them in the bread machine, and program for Yeast Bread Light, or Sweet Bread. Press START and mix for 2 minutes. Press STOP and allow to rest l5 minutes until very foamy. COMPLETEING THE DOUGH Have all the ingredients at room temperature. Add all these ingredients except the dried pineapple in to the sponge in the machine. Press START, reprogramming if necessary, retaining the same program setting. Add the dried pineapple at the very end of the final knead cycle. The finished bread is feathery light with a solid texture.
