Sourdough Cracked Wheat Bread

Ingredients:

     1/2  cup           cracked wheat
     1/2  cup           hot water
   2      cups          warm -- (120') water
   2      tablespoons   dry yeast
   2      cups          culture
     1/2  cup           bran
   2      cups          whole wheat flour
   5      cups          flour
     1/2  teaspoon      salt
 

Preparation:

Soak cracked wheat in hot water until luke warm and most of water is soaked in. In a large mixing bowl, dissolve yeast in warm water. Add starter, mix well. Add wheat and dry ingredients, mix thoroughly. Turn onto floured board and knead until smooth and elastic. Grease bowl, place dough in, turn to grease top, cover and let rise until double in a warm place. punch down, shape into loaves, place in well greased loaf pans. Cover and let rise until nearly double again. Place in oven, Bake 50 to 60 minutes, or until loaves sound hollow when tapped on the bottom, at 375. Remove from pan immediately, butter tops, cover and let cool away from drafts.
