                        First you make the Muesli:
  1 1/2 Cups old-fashioned oats
  1 1/2 Cups water
2 Cups shredded unpeeled apples (Granny Smith)
1 1/2 Cups or 9 oz. pitted prunes -- chopped
  2 Tablespoons honey
  2 Tablespoons lemon juice
     1/2 Tsp. cinnamon

Preparation:

Grease 9x5 inch loaf pan and sprinkle bottom and sides with oats. In a mixing bowl, beat sugar, oil, eggs, and vanilla. Stir in 2 cups Muesli. Blend in remaining ingredients. Mix until just well-blended. Pour into prepared loaf pan. Bake 55-60 minutes until pick inserted comes out clean. Cool in pan 15 minutes, then loosen edges and turn out on a rack and cool. My mailman brings me some unusual surprises. One day I received a package from Judy with this bread inside baked in two tiny little glass loaf pans. Judy and I share a love for depression glass and these little pans are a unique addition to my collection. But the bread in them, wow! So moist and rich. Of course some of the ingredients are a little unusual too, but that's what makes this bread so good! I always think of the mail when I think of this reci
