Toasted Coconut Tea Bread

Ingredients:

   2 2/3  cups          all-purpose flour
   1      cup           sugar
   3      teaspoons     double-acting baking powder
   1      teaspoon      salt
   1 1/3  cups          flaked coconut -- toasted
   1      tablespoon    orange rind -- grated
   1                    egg -- well beaten
   1 1/2  cups          milk
   1      teaspoon      pure vanilla extract
 

Preparation:

Makes one 9 x 5-inch loaf 1. Mix flour with sugar, baking powder and salt; stir in coconut and orange rind. 2. Combine egg, milk and vanilla; stir into flour mixture. Do not beat. 3. Pour into greased 9 x 5-inch loaf pan; bake in preheated 350 F. oven 1 hour and 10 minutes, or until cake tester inserted in center comes out clean. 4. Cool in pan 10 minutes; remove from pan and finish cooling on rack. 5. Cut into thin slices; toast, if desired. NOTE: For easier slicing, store overnight, wrapped in waxed paper, plastic wrap or aluminum foil.
