4 flour tortillas
1 bunch spinach
1/2 pound roast chicken from deli -- sliced
1 Vidalia onion -- thinly sliced
Thousand Island Dressing
salt and pepper, to taste |

Preparation:
Wash spinach and pat dry. Soften tortillas in microwave and spread with Thousand Island dressing. Arrange spinach on top and then chicken slices. Season with salt and pepper, and arrange paper thin slices of Vidalia onions on top. Roll tightly and serve. |
