Preparation:
Bring apples, onion, red pepper, apple juice, sugar,
cinnamon and ginger to a boil, then reduce heat and
simmer for 15 minutes. Remove cinnamon stick.
Meanwhile, sprinkle gelatin over reserved peach juice
and let stand for one minute. Stir over low heat
until gelatin is completely dissolved. Stir gelatin
and peaches into apple mixture. Place in a 5 cup mold
and chill overnight. Unmold before serving.
