Ingredients:

  4                 c.  dried apricot halves (18 oz.)
  3                 c.  cider vinegar
  4                 c.  onions  cut in wedges
  1                 c.  candied ginger  chopped
  2              Tbsp.  salt
  1              Tbsp.  garlic cloves   minced
  1               tsp.  Tabasco sauce
  3                 c.  brown sugar     packed
  3                 c.  sugar
  2                 c.  water
  3                 c.  golden raisins
  2              Tbsp.  whole mustard seed
 

Preparation:

Cut apricot halves in half. Combine all ingredients in large heavy pot. Bring to a boil, then simmer slowly, uncovered until thickened, about 1 hour, stirring often. Portion into sterilized jars; seal at once. If desired, process in boiling water bath for 15 minutes. Makes app. 4 pints.
