2 pounds zucchini -- cut in 1/4" slices
1 small green pepper -- chopped
1 clove garlic -- minced
1 teaspoon salt
1/4 teaspoon pepper
4 tomatoes -- peeled and chopped
2 tablespoons butter or margarine
2 tablespoons minced parsley
Preparation:
makes 6 to 7 servings
In slow cooker combine zucchini, green pepper, onion, garlic, salt and pepper. Top with chopped tomatoes., then butter. Cover and cook on high for about 2 hours or until tender. Sprinkle with chopped parsley.
