Preparation:
In a small shallow dish, stir together bread crumbs, sugar, salt and pepper.
In a large skillet, heat oil over medium-high heat. Coat tomato slices with crumb mixture, patting off excess. Fry a few slices at a time about 3 to 4 minutes, turning once, or until lightly browned. Drain on paper towels. Repeat with remaining tomatoes. Makes about 4 servings. |
