Gazpacho - Something Different for Passover

Ingredients:

  1             medium  onion
  1             medium  cucumber -- peeled and seeded
     1/2           cup  chopped fresh chives
  1              small  green pepper
  3             stalks  celery -- strings removed
  3                     ripe tomatoes -- peeled and seeded
  1              large  clov  garlic -- minced
  3               cups  tomato juice
  2        tablespoons  olive oil
  1         tablespoon  lemon juice
  1           teaspoon  salt
     1/2      teaspoon  black pepper
                        hot pepper flakes -- my addition
 

Preparation:

Very finely chop the vegetables and mince the garlic. Combine the tomato juice, oil, lemon juice, salt and pepper and mix with the chopped vegetables. One-half of the mixture may be pureed and then mixed with the finely chopped veggies and hot pepper flakes - no problem with not pureeing any of the veggies as this gives a good texture and the taste is good. Refrigerate several hours prior to serving.
