Red Cabbage With Beer

Ingredients:

   1      medium head   red cabbage -- shredded
     1/2  cup           red wine vinegar -- up to 3/4
   2                    granny smith apples -- peel/core/slice
     1/2  cup           sugar
     3/4  cup           water
   1      medium        onion -- diced
     1/4  cup           butter
     1/2  cup           beer -- up to 3/4
   1      small         bay leaf
   1      pinch         cinnamon
   1      pinch         ground cloves
   1      pinch         allspice
                        salt and pepper -- to taste
 

Preparation:

Place all ingredients in a covered pot (I always use one of my Le Cruesets) and bring to a boil. Reduce heat and cook slowly for about an hour. Taste and adjust seasonings. If there's too much liquid, uncover and cook until most of the liquid is evaporate
