1 tablespoon olive oil
1 medium red onion -- chopped
3 medium zucchini -- cut into rounds
1/4 teaspoon dried oregano
fresh ground pepper
Preparation:
In a large skillet over medium heat, heat oil. Add onion, and saut‚ until onion is translucent but not browned. Add zucchini, cover, and simmer 3 to 4 minutes. Sprinkle with oregano and pepper, and serve hot.
